Saison
Originally brewed for field workers, these farmhouse ales were light and effervescent. Historically Saisons had a low ABV as they were consumed as refreshment for thirsty workers. Nowadays they hover around 6 or 7% ABV. The special yeast used in saisons makes for a very dry beer and contributes peppery spicy flavors. Varying amounts of wild yeast are present is some varieties, giving the beer a hint of a barnyardy, earthy flavor. Many saisons are lightly spiced as well. All of these factors, especially the dryness and spicy earthy flavors of saisons, make for one of the most versatile beers to pair with food.
